Make sure that the beer has some contact with the air, as insufficient can make the beer taste bitter. Always remove the lid daily and stir the beer to ensure good airation.
If you make beer from grains and hops, adding too many hops will cause the beer to be very bitter. Next time, reduce the quantity of hops in the recipe or use a less bitter hop.
