HEAD The froth on the top of the beer

HOPS The dried flowers of the hop plant used to give the beer the nose and flavour, also acting as a preservative at the same time. There are many different varieties of hops, each with their own
characteristics and bitterness (measured in alpha-acid units)
HOT BREAK When the proteins clump together and drop to leave a clear beer by the use of copper finings (irish moss)
HYDROMETER An aid to measure the specific gravity (liquid thickness or viscosity) at
various stages of the beermaking process. It is a glass instrument that floats in the liquor or beer and gives readings of sugar content. Generally, the initial sugar content is measured and other readings are taken during the progress of fermentation until completion.
IRISH MOSS Finings made from seaweed extract, added to the boil to produce a clear beer (see copper finings)
